Do not confuse a pellet grill for gas grills. Like the name suggests, a pellet grill obviously uses pellets for cooking its food. Due to the lower oxygen at 9200 FASL, I cannot keep the smoker hot and I cannot get it above 250 Deg. F. I seem to be limited due to the diameter of the smoker…just can’t get enough coals and air to get and maintain temps. Therefore, I want to buy a new smoker, on that will regulate temperature at temperatures of 200 – 450 deg F. Any experience or guidance for a smoker brand and type (wood pellet, charcoal, or electric) at high altitudes? i am looking for a smaller size smoker unit.

Open the smoker and remove the cooking grate and any other racks you might have inside. Don’t forget to remove the heat diffuser as well. Why not take a picture of how they are placed inside the smoker, so you will have a reference handy when putting them back after cleaning. If there are debris and ash inside the smoker, use the vacuum cleaner to suck out the rubbish.
So if you want more of a smoke profile, cook at longer and lower temps in your pellet pit. I have found that is the best way to get a more distinct smoke profile in your food. Cook at 180-190 for the first several hours.
Rubbery skin has very little to do with the type of heat (direct vs indirect). Rubbery skin is a result of too low a cooking temperature. Take your smoker/grill or whatever you use and get the temperature in the mid 400’s or even higher and you will get crispy skin. One thing though never let the internal temperature of your bird get over 150 or you’ll have crispy skin and dry crunchy meat too. Take it off the grill and let is rest a full 30 minutes. Best bird you’ll ever eat no matter which grill, smoker, 50 gal barrel, etc you cooked it on.
Might start with the simple small one and see how much i like it and the pellet process overall, but if i DO stick with it, i’m going for one of those Yoders. I can tell my wife that unlike guitars, i will not need to keep buying smoker after smoker, like i do my Fenders and Gibsons.

If you have faced or currently face the problem with common things like pellet feed jamming or wear and tear of your smoker, then replacing the exact component will solve your problem.
