Rubbery skin has very little to do with the type of heat (direct vs indirect). Rubbery skin is a result of too low a cooking temperature. Take your smoker/grill or whatever you use and get the temperature in the mid 400’s or even higher and you will get crispy skin. One thing though never let the internal temperature of your bird get over 150 or you’ll have crispy skin and dry crunchy meat too. Take it off the grill and let is rest a full 30 minutes. Best bird you’ll ever eat no matter which grill, smoker, 50 gal barrel, etc you cooked it on.

Hello Mark! Thanks for commenting here. The Kalamazoo Hybrid Grill looks like a BEAST! If you can swing it, I’d go for it. I truly enjoyed cooking on the Memphis Grill, which is to date the most high end pellet grill I’ve used. It offered a nice blend of professional grade convection with the wood fire taste of the pellets. The Kalamazoo hybrid really does seem to offer one step beyond with the addition of charcoal and wood chunks. I see that Derrick Riches of About.com stands behind the Kalamazoo brand. If you have a little more cash, choose Camp Chef Woodwind Pellet Grill with sear box. I think that Sear Box is a great addition, it will certainly come in handy to quickly grill veggies or hamburgers.
If you would rather avoid the potential for rust altogether consider getting a stainless steel pellet grill. Not only are they rust resistant, but they are extremely durable and a lot easier to maintain.
Unlike most grills, you do not want to use water to clean pellet grills. Much of the inside of a pellet grill is either electronic or motorized, so putting water inside of the grill is a very bad idea and could possibly ruin it. You will want to keep your pellet grill as dry as possible on the inside, so store your hoses away from it to prevent any accidental spraying. The grates of the grill will be removable, so take them off the grill before scrubbing them. Use a gentle brush, soap, and water to clean the grate, and then let it dry completely before putting it back on the grill. Because good quality pellets burn so completely and effectively, there will be very little ash to clean up afterwards. The only thing that you will usually need in order to clean the inside your grill is a vacuum with an extension that can reach into the burner. When the ash inside the grill appears to be building up, just vacuum it out and the clean-up is complete.
While this Davy Crockett smoker does not have a roller beneath it, it does have 2 foldable legs which can be converted into handles. And at only 69 lbs, it is very easy to take this grill with you on a road trip; you just fold the legs up, put it in your car boot and go! I actually always keep this smoker in the trunk of my car because it is the perfect camp time smoker.
Hi Mark – I’ve not personally used the Smoke Hollow Pellet Grill you mention here. The base model pellet smokers I see at stores like Sam’s and Costco are going to do fine for most backyard cooking preparations. I’d look into what the Smoke Hollow folks offer customer service wise. When you buy at the lower end, understand that the unit might not enjoy the longevity or durability of other mid-tier or higher end models.
According to Bruce Bjorkman of MAK, his cookers use about 1/2 pound of pellets per hour when set on “Smoke” (about 175°F). At 450°F, the high temp, they burn about 2.3 pounds per hour. This is about the same average as I have experienced on a variety of pellet eaters. The burn rate will vary somewhat depending on the outside air temp, and how much cold meat is loaded in the grill, but cooking load should not have a major impact. Cooking pellets run about $1 per pound depending on the wood flavor, brand, if you get them on sale, and if you have to pay shipping. As a point of comparison, Kingsford briquets list for about $0.75 per pound, but they don’t pack the same BTUs because there are fillers. I usually buy 40 pound bags of BBQr’s Delight pellets from BigPoppaSmokers.com for $45 and shipping is free to IL. That’s $1.13 per pound. That means that if I cook a slab of spareribs for six hours at 225°F I will probably burn about 4 pounds at about $4.50. If I put 8 slabs in there in rib holders, and allocate 1/2 slab per person, my cost for 16 people is about $0.28 each. If I grill a mess of chicken parts at about 325°F for about 1 hour, I will use about 1.5 pounds of pellets for a cost of $1.70.
